Title: Apple Chez Muffin

1/2cShortening
1/2cSugar
2 Eggs
1 1/2cAll purpose flour; sifted
1tsBaking powder
1tsBaking soda
1/2tsSalt
3/4cQuick-cooking rolled oats
1cApples, finely chopped
2/3cSharp cheddar cheese; coarsely grated
1/2cChopped pecans (optional)
3/4cMilk
15 Red apple; thin slices, unpeeled
  Butter or margarine; melted
  Cinnamon-sugar

Cram shortening and sugar. Add eggs, one at a time,beating well after each addition. Mix and sift flour, baking powder, baking soda, and salt; stir into shortening mixture. Stir in oats, apples, cheese and pecan; mix well. Add milk gradually, stirring only to moisten other ingredients. Fill well greased muffin tins 2/3rds full. Dip apple slices first in melted butter, then in cinnamon-sugar. Press 1 slice into batter in each muffin cup. Sprinkle lightly with cinnamon-sugar. Bake at 400F for 25 minutes.
